
Sandwiches & Fun Foods
Melty cheese, sweet-tart tomatoes, silky avocado, lively herbs—makes for one great sandwich! Serve with salsa on the side for dipping.
Makes 4 servings
4 SUNSET® Kumato™ Tomatoes
8 slices sourdough, Tuscan or other rustic-style bread
1 avocado, sliced, or 1/2 cup prepared guacamole
2 large, cooked chicken breast halves, thinly sliced
fresh cilantro or basil leaves, optional
8 slices pepper jack cheese
olive oil or pan spray for grilling
Slice each tomato into 5 slices. Lay out 4 slices of bread and divide avocado among them or spread with guacamole. Continue building sandwiches in this order: chicken, tomato slices (lightly sprinkle with salt), herbs and cheese. Close sandwiches with remaining bread.
Heat panini grill or outdoor barbeque grill to medium-high heat. Lightly brush sandwiches with olive oil or spray or brush panini grill. Grill sandwiches on each side until golden brown. (If not using a panini press, press sandwiches occasionally with a spatula.) Cut each sandwich in half and serve with salsa for dipping if desired.
